Schii Soup
4 qt. water
1 medium carrot, sliced
4 potatoes, cubed
2 stalks celery, sliced
1 medium yellow onion, chopped
1 bunch green onions, sliced
1 bunch parsley, chopped
4 tomatoes, skinned and chopped
4 tomatoes, skinned and chopped
1 Tbs. dill weed
1 green pepper, chopped
1 medium head cabbage, chopped
salt and pepper to taste
Bring water to a boil, then reduce heat to medium high. Add carrots and potatoes. Add celery and yellow onion. Cook until potatoes are tender. Add green pepper. Add cabbage and
tomatoes. Cook until cabbage is tender. Add green onions, parsley and herbs. Salt and pepper to taste. Garnish with a dab of sour cream.
